Easy Peasy Avocado Bites
These crunchy little bites are a fantastic for little eaters or for parents eaten on their own or stuffed in a sandwich.
PREPARATION: 2 MIN | COOKING: 10-15 MIN | MAKES: 1 cup
1 cup frozen avocado chunks
¼ cup vegetable oil
¼ cup parmesan cheese
¼ cup hemp hearts or bread crumbs
¼ teaspoon garlic powder
Optional: ½ teaspoon lemon/lime zest
Preheat oven to 400°F. Line a baking sheet with aluminum foil.
In a bowl, stir the frozen avocado pieces with the oil until well coated.
In another bowl, stir together the rest of the ingredients.
Using a slotted spoon or a fork, transfer the avocado pieces to the parmesan cheese mixture. Stir quickly.
While transferring the avocado bites to the baking sheet, shake off loose pieces of coating. Scatter the pieces so they don't overlap.
Bake for 10 minutes. Serve right away.
Have fun with nutritious dips to go alongside these bites like tzatziki or hummus.
